Either from birbec +‎ -ar or from Vulgar Latin or Late Latin vervēcārius, from Latin vervēx. (Also attested as Medieval Latin birbicārius or berbicarius). Compare French berger, Sardinian berbecarju, berbecàlgiu, berbegarzu, Romanian berbecar.
