From French amollissement, from amolliss- [extended stem of amollir (“to soften”, verb), from a- {from Latin ad (“to”)} + mollir, from French mou, or from Latin mollīre (“to make soft, soften”)] + -ment (suffix forming nouns from verbs) [from Late Latin -mentum, from Latin -menta]; equivalent to English amollish (see Middle English amolisshen) + -ment.
